1. Place flour, yeast and salt in a bowl and mix. 2. Gradually add the water and olive oil then knead by hand for 7-10 minutes until the dough is smooth. 3. Place dough in a lightly oiled bowl and cover with cling wrap. Set aside in a warm place to rise for 30 minutes to an hour until it doubles in volume. 4. Knead dough gently for a few minutes to remove some air. 5. Divide dough in two and roll out pizza bases. Sprinkle a little flour on the bench before rolling to prevent dough from sticking. Preparation Time: 15 minutes Cooking Time: 30 minutes |
400g Plain Flour 2 tsp dried yeast 2 tsp salt 1 cup warm water 3 tbsp olive oil |

For a delicious crunchy base, sprinkle polenta onto the kitchen bench instead of flour, when rolling out the pizza dough.

Would rice flour do the same job as polenta to give crunch?

Unfortunately rice flour wouldn’t produce that same crunch, Daryl. All flours get sticky and a bit ‘glue like’ when they come in contact with moisture so it wouldn’t crisp up in the same way Polenta does.
