- Preheat oven to 250°C.
- Place tomatoes and mushrooms on a tray, drizzle with olive oil, season with salt and pepper and then place in oven and cook for 5-8 minutes until lightly roasted, set aside.
- In a small bowl, mix Perfect Italiano™ Ricotta and pesto then spread evenly over pizza base, sprinkle over Perfect Italiano™ Perfect Pizza to evenly cover the base, then top with tomatoes and mushrooms.
- Place pizza in the oven for 10-15 minutes until the cheese is melted and base is crispy, remove from oven then top with torn pieces of prosciutto and rocket, cut and serve.
- Use salami, smoked ham or a different flavoured pesto for variety.
