Lactose Free Bbq Chicken & Sweet Potato Pizza

- Preheat the oven to 220°C (fan forced) and lightly grease a 30cm pizza tray.
- Roll out pizza dough or place store bought pizza base onto prepared tray and spread BBQ sauce evenly over leaving a 1cm edge.
- Layer with roasted sweet potato slices, shredded chicken and red onion.
- Sprinkle Perfect Italiano Lactose Free Pizza Cheese over the top, drizzle with a little olive oil and bake for 10-12 minutes or until the cheese is bubbling and crust is golden (see notes)
- Garnish with fresh rocket, if desired, and serve immediately.
More Tips
- If using store bought pizza bases, choose bases that are 30cm in diameter and adjust the cook time to 8-10 minutes.
- To make the roasted sweet potato slices, peel and thinly slice 250g of sweet potato. Place onto a line baking tray and drizzle over 1 tbsp of olive oil. Season with salt. Cook in a 220C preheat oven for 12- 15 minutes.
- To save time, preheat oven and roast sweet potato slices while preparing the remaining ingredients for the pizza.
- Use leftover roast chicken and vegetables from your Sunday roast. A store-bought BBQ chicken works well too.
