Broccoli Bacon & Parmesan Pasta
Weeknight dinners have never been so easy with this flavoursome dish, 20 minutes is all it takes to make it.
- Bring a large pot of salted water to the boil and cook pasta according to packet instructions. Drain, reserving ⅓ cup of the cooking water.
- Heat oil in a large heavy based pan over medium high heat. Add bacon and cook, stirring frequently for 3 minutes or until browned.
- Add broccoli and garlic and reduce heat to medium. Cook for a further 3 minutes or until broccoli has softened but still retains a bite.
- Stir in cooked pasta and pasta water and toss to coat. Season with salt and pepper and stir through half the Parmesan. Serve immediately topped with remaining Parmesan.
