- Place the potato in a colander and squeeze out all moisture. Transfer to a large bowl and add butter. Season with salt and pepper.
- Heat oil in a frying pan over medium heat, portion potato mixture into handfuls before pacing in the pan. Turn each rosti after 3-4 minutes ensuring they are golden brown on both sides.
- Place rosti on a tray and top with 4 Cheese Melt. Place in an oven or under a grill until cheese has melted and it begins to brown. Remove and serve immediately.
- Serve alongside eggs, smashed avocado, chutney or fresh tomato.
