Carbonara Pasta Bake
- Preheat the oven to 200°C / 180°C fan-forced. Cook pasta in large saucepan of boiling water, until just tender. Drain. Return pasta to pan.
- Meanwhile, heat oil in a large frying pan over medium-high heat. Cook garlic, bacon and mushrooms, stirring for 6-7 minutes or until mushrooms are tender.
- Whisk eggs, cream and 2 cups of the combined cheeses in a large jug. Season with pepper.
- Add egg mixture and bacon mixture to pasta. Toss gently to combine. Transfer pasta mixture to a 1.5L (6-cup) capacity baking dish. Scatter with remaining combined cheeses. Bake for 15-20 minutes or until golden.
