Method


  1. Preheat oven to 180°C / 160°C fan-forced.
  2. Please configure the Recipe Tip in the dialog.

  3. In a large non-stick fry pan with deep sides, heat oil over a medium heat. Add the bacon and cook for 3 minutes until browned. Reduced the heat to low, add the onion, and cook for another 5 minutes or until the onion softens. Add the chilli flakes and garlic and continue to cook for 2 - 3 minutes. Pour in the wine and reduce until liquid has nearly evaporated. Add the tomatoes, and season with salt and pepper, as desired. Simmer for 20 minutes until the sauce thickens.

  5. Meanwhile, cook the penne according to packet instructions. Drain well and set aside until the sauce is ready.

  7. Once the sauce has thickened, add the penne and stir well to evenly coat the pasta. Transfer to a large baking dish and sprinkle over the Perfect Bakes cheese. Place in oven and cook for 15 - 20 minutes or until cheese has melted and turns golden brown.
